Fermented at low temperature to maximise fruit potential and bottled within the year of vintage to capture bright fruit and crisp acidity. Slight residual sugars remain, adding to mouthfeel and drinkability.

Method

Fermented at low temperature to maximise fruit potential and aromatics. We purposely don’t reduce to full dryness because that’s the way, ah-hah, ah-hah, we like it, ah-hah.

Results

A warmer climate twist on the traditional. Think Sauv Blanc with a tropical undertone. Lively and aromatic with green herbs, gooseberry, white peach and grapefruit flavours. Off-dry with juicy acidity for a full, round finish.

Conclusion

Heathcote’s warmer climate expresses ripe stone-fruit flavours in Sauvignon Blanc. Just for fun, we have created a faintly sweet little franken-fruit monster – charming S.B and non-S.B drinkers alike. Don’t generally partake in the Savvy B?? That’s ok, you’re gonna love this one!
