The signature wine of Whistling Eagle is the ‘Eagles Blood’ Shiraz. The winemaking methods are traditional, small ferments, hand plunging and basket pressing giving the wines intense colour with deeply concentrated flavour and soft balanced finishing tannins. The wine displays a rich palate of berry fruits and mocha with hints of clove, finishing with earthy dark chocolate and velvet tannins. The colour is a saturation of black purple. Harmony and balance is Ian’s approach to winemaking and viticulture.
