Made from rich, red berries sourced from a unique easterly-facing single vineyard in Kimbolton, our 2016 Matilda Reserve Shiraz is one of our most special Reserves yet. Harvested by hand in early March, the fruit was transported directly to the winery to be processed immediately. Post fermentation, the wine was racked into two aged French barriques. Both barrels were allowed to go through Malolactic fermentation during the Spring of 2016 and a second racking took place in late 2017. The wine was exposed to new French oak staves for an additional 3 months, enhancing the spicey-pepper characteristics. The wine was cross flow filtered prior to bottling in late 2018. Some sediment remains in bottle as the wine was not fined. Bottled with cork and meticulously hand labelled, this full-flavoured, fruit driven Shiraz has a spicey, white pepper lingering finish.
Harvest - 22 February 2016; picked by hand.
Aged In oak (67% French, 33% American); 27 months.
Bottled - 20 September 2018.
Palate - Plum, cherry and blackberry with a spicy, white pepper finish.
Food - recommendation Succulent Porterhouse steak or slow cooked lamb shoulder.
Drinking best - 2019-2025.
