Shiraz fruit from four premium vineyards running North to South along the Heathcote Faultline were blended to create this ‘Cambrian Rise’ Shiraz. The four vineyards were located in Colbinabbin (25%), Toolleen (5%), Heathcote (45%) and Kimbolton (25%). All vineyards were harvested by hand between late-February and mid-March and all fruit was transported directly to the winery the same day it was picked. Using a combination of French (45%) and American (55%) oak Barriques, using 20% new American oak. All barrels were allowed to go through Malolactic fermentation in mid-2018. A second racking occurred in late 2018, followed by cross flow filtration and bottling in December 2019. The wine was not fined. Juicy black raspberry, sage and allspice.
